Description
This extra virgin olive oil is of the highest quality, as it only contains carefully selected olives and has been processed at low temperatures in order to conserve all the polyphenols, natural antioxidant and protective substances found in olive oil which are beneficial to our health. Polyphenols are associated to the taste and the aromas of the oil; they grant it a potent aroma and a bitter and spicy flavour.
An extra virgin olive oil’s free acidity is below 0.8%, a chemical parameter which does not affect the flavour, but which indicates its level of oxidation.
